Vegan Curry

Don’t you love the way cooking a curry makes the house smell? Mmmmm.

I cannot handle very spicy foods at all but oh how I love a tasty curry. My curry isn’t complete unless I have sambals which are banana, chutney and desiccated coconut.


Make this vegan curry your own by adding other vegetables of your liking (potatoes, cauliflower, etc). As well as whichever bean you would prefer (chickpea, cannellini bean, etc).


Ingredients:

- 1 onion, chopped

- 3 medium baby marrows, chopped

- 3 carrots, chopped

- 1 can chickpeas

- 1 can coconut milk

- 1 tsp turmeric

- 2 tbsp curry powder

- 1 tsp cumin

- 1 tbsp flour/cornstarch


Add onion to a pot and saute.

Add baby marrow and carrots and cook for a further 4 minutes.

Add all the dry ingredients and stir in.

Pour in coconut milk, chickpeas and simmer until the sauce thickens and the vegetables are cooked.

Add more flour or cornstarch if your sauce is not thick enough.

Enjoy with your favourite rice (I used brown rice).

Add some chutney, banana and coconut sprinkles as a topping.
