Sweetcorn Stuffed Squashes

Easter has finally arrived.
Have you begun planning your Easter lunch or dinner yet?
Besides hunting for some eggs, Easter is a time to spend with your loved ones and cook up a storm!
In our household we usually have a good ole South African braai. But now that I happily don‘t eat meat anymore I will be cooking a lot of veggies and desserts for the family to enjoy.
One of my favourite flavourful side dish is SWEETCORN STUFFED SQUASHES.
Ingredients:
- 3-4 gem squashes
- 1 tin of creamed sweetcorn
Topping- grated cheese of your choice, quantity as per your preference.
Cut gem squash in half. Spoon out all the seeds. Steam them for 25 minutes or until soft (If you do not have a steamer you can boil in a pot with salt water).
Once cooked, place the gems cut side up in an oven dish. Divide the tin of sweetcorn between the gems and fill each hollow. Grate your desired amount of cheese and sprinkle on top of each stuffed gems. Heat under a medium grill until cheese is melted and browned (10-15 minutes)
Serve warm.
