Freshly Baked Scones

Homemade scones make everything better right? YES! Paired with your favorite jam and some coffee. Oh my goodness. The best way to wake up on a weekend don’t you think?

My Mom loves making scones. She is actually the reason we baked some yesterday. Usually on weekends for breakfast we either have pancakes, flapjacks or French toast. But yesterday Mom had a bee in her bonnet so we decided to bake some date scones (well Mom baked and I took pictures 😜).


Very simple recipe: 6 ingredients and about 30 minutes to make.


Ingredients:

- 2 cups of flour

- 20ml baking powder

- pinch of salt

- 60g unsalted butter

- 190 ml milk of your choice

- 60g pitted dates


Pre-heat oven at 230°C. Sift all the dry ingredients together.

Cut up dates into small pieces.

Add the butter (must be soft) into dry ingredients and mix well until a breadcrumb texture. Add the milk and mix until a soft dough, add the cut up dates. Turn out into a floured surface and oat it out until it’s 12mm thick. Cut out circles with a cutter or knife.

Transfer into a baking tray and bake for 12 minutes. Do not leave them in for longer because then they become very hard. Put them onto a cooling rack. ENJOY
