These are not just any flapjacks, these were flapjacks made specially for a family members birthday 🎁
When I make flapjacks I always use ripe bananas or a buckwheat mix. But he will only eat “normal” flapjacks, i.e. flour based flapjacks.
Obviously it’s his birthday so I thought I’d try make the fluffiest flapjacks ever!
The simple trick was to let the batter sit for ± 20 minutes.
Ingredients:
2 cups milk of your choice
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 cups all-purpose flour
1 cup frozen/fresh blueberries
Toppings:
More blueberries
Granola
Syrup
Combine all ingredients into a bowl. Let rest for 15-20 minutes.
Meanwhile, preheat a large non-stick frying pan over medium-low heat.
Using a 1/4 cup measuring cup, scoop up the batter and cook about 2-3 minutes per side, until nicely browned.
Repeat with the rest of the batter.
Serve hot or warm with toppings of your choice 🥞
